Shrimp and Feta with Orzo Casserole

 I thought since I just posted the B1G1 FREE Feta coupons and Target has the $1/1 Seafood Coupon  I would share this recipe. I made this the other day and husband said it was the best pasta dish he ever had! Try it for yourself. If you have little ones like I do I just keep some plain Orzo on the side with Shrimp chopped up in Shrimp Bites since the kids are kinda of picky.

Shrimp and Feta with Orzo Casserole
3 TBS of Olive Oil
1 Cup Chopped Onion
2 Cloves Minced Garlic
3 Medium Tomato's Chopped
1/2 Cup Fresh Parsley or 3 TBS Dried
2 tsp. Oregano
1 tsp. Sugar
1 tsp Salt
1/4 tsp Pepper
1/4 tsp Pepper Flakes
2 TBS Tomato Paste
1/2 Cup Dry White Wine
1- 1lb. of Shrimp Defrosted, Peeled and Devained
8 oz of Feta Cheese Crumbled
1 lb Package of Orzo Pasta
1 tsp additional Olive Oil
  • Pre Heat oven to 400*
  • Heat Olive Oil in skillet on medium heat, saute' onion until clear and then add garlic and tomato and cook for 4 minutes, stirring often. Add Parsley, Oregano, Sugar, Salt, Pepper,  Pepper Flakes, Tomato Paste, and Wine. Let simmer for 15 minutes. The mixture will thicken slightly.
  • Mean while cook the Orzo to manufacturer direction until al dente'
  • Once Orzo is done drain and add 1 tsp of olive oil to keep it from sticking.
  • Pour the Orzo into a 9x13 Casserole dish that was sprayed with non-stick spray.
  • Add Shrimp to Tomato Mixture and Cook until Shrimp are pink.
  • Pour Shrimp and Tomato mixture on top of the Orzo, then Top with the crumbled Feta. Bake for 10-15 minutes until warmed through and the feta has softened.

Garlic Parmesan Tilapia

So last night for for Dinner I wanted to make something light so I decided on fish! Costco had a 2.5 LB bag of Frozen Tilapia Loins for $14.99, kind of pricey but definitely worth the splurge. I really like that this fish did not smell "fishy" and each loin was in it's own cryovac sealed pouch. I have not had the best luck with cooking fish at home so Joe and I were really surprised oh how yummy this was! The best part is that it is a perfect for our Healthy Eating Plan!

Ingredients
4 Tilapia Loins Thawed
1 TBS of Butter
1-2 Cloves of Garlic Minced
1 TBS of Lemon Pepper Seasoning
(I used the new Weber Seasoning and it was awesome)
1 Lemon
Salt and Pepper to Taste
Block of Parmesan Cheese to taste
Non Stick Spray


  • Preheat Oven to 375 degrees

  • Spray a 9x13 Casserole dish with non stick spray

  • Take the Tilipia and pat dry with paper towels and place in casserole dish

  • In a sauce pan melt the 1 TBS of Butter and saute the Garlic (I do this to get rid of that "raw" garlic taste)

  • Squeeze the entire lemon all over the fish

  • Sprinkle with the Lemon Pepper Seasoning and Salt and Pepper to Taste

  • Drizzle the Butter/Garlic Mixture over the Fish

  • Then take the block of Parmesan Cheese and grate the cheese over the Fish. I used my micro plane to get really fine shreds of the cheese. A little goes a long way. You could substitute grated Parmesan like Kraft.

  • Bake at 375 degrees or until the fish flakes with a fork
I served this with some Brown Rice and Sautéed Zucchini, Onions, and Tomato's.
One great tip I have for making some yummy brown rice is to add a teaspoon of Chicken Base such as "Better than Bouillon" to the water. It really makes the rice special!
